  • Cooking with Indian Spices

    Ashwini will introduce you to the unique flavors of Indian spices. These are the "magic powders" that her mother uses to turn any dull meal into a feast. A teaspoon of these powders added to your cooking can turn any novice cook into an expert! You will learn how to make them from scratch and how to use the readymade spices. Students will have an opportunity to taste, touch, smell, and learn about turmeric, cumin, red chilies, fenugreek, Indian mustard, anise, and other spices. Recipes will include: Vegetable Samosa (crisp turnovers stuffe7d with delicately spiced potatoes, peas, and herbs), Mango Chutney (sweet sour and spiced mango sauce), Gulab Jamun (vanilla flavored pastry sponge soaked in honey and rose water). Vegetable Biryani- dish of curried rice with vegetables, dried fruits and nuts, Matar Paneer--(Homemade cheese (paneer) with green peas cooked in a mildly spiced sauce) Bring an apron!
  • India's Rich History and Cuisine

    The beauty and variety of India is truly reflected in its rich history and cuisine. Ashwini will share her knowledge of India and the delicious cuisine many have come to enjoy. Recipes include: Idli- (steamed soft rice cakes); Sambar (yellow lentil dal soup with vegetables, herbs, and spices); Exotic Coconut Chutney (fresh spiced coconut sauce); Rich and Creamy Butter Chicken (succulent morsels of boneless chicken cooked in a smooth, velvety yogurt sauce with cream and aromatic spices); Roti (soft, thin whole-wheat flat bread); This is a hands-on class. Please bring an apron.
  • Let’s Make Jam

    This class will discuss the supplies needed make your very own delicious homemade jam, a demonstration of the jam making process, and two ways to preserve the jam once it is made. There will be plenty of time for questions and at the end of class we will sample the jam we make. Each participant will go home with their very own jar of jam.

We will also try to guess where each wine is from. This class will also cover basic techniques in tasting and wine label reading.
