A light-hearted presentation of basic home canning safe methods, by water bath and pressure canner. Learn the most common mistakes and reasons for failures. We’ll cover home canning wild game, the vegetable garden, best by dates, pretty much anything you can put in a jar, alternatives to preserving without canning and the real way to preserve eggs. Includes a take home guide, recipes, and large bibliography with books, websites, and social media – all of the best, microbiologist approved. There will be plenty of time for questions! This class is sponsored by Earthfest.

Diane Klein

Diane Klein is a board certified microbiologist with 35 years of work experience in the field. She has been a Master gardener for several years and is currently working toward a Master Naturalist certificate. Diane has several large flower beds and a very large vegetable garden at her NW Rochester home. It might be called an urban homestead , with chickens, rainwater reclamation, and enough fresh food to supply her neighbors, children's families and food shelves. Diane is also a regional Ball Home Canning Representative and maintains a MN Department of agriculture Cottage producers license.
